The curry leaf adds a really delicious aromatic flavour to the dish which isn’t really like anything else, however I know sometimes curry leaf is a bit tricky to find… So if you’re unable to source it, this dish is equally delicious without the curry leaf.

Caramalising the onions takes a little bit of time, but this dish is very low effort and all made in one pan. It’s a great balance of smoky, sweet and rich, with a little bit of lemon at the end to bring it all together.
