Everyone has their own take on cajun seasoning, but in general it’s a blend of different spices and dried herbs such as smoked paprika, dried thyme, onion powder etc. We know that chickpeas go well with spice (hello delicious chickpea curries!) so here we’ve got quick and easy creamy cajun chickpeas.

Everyone has their own take on cajun seasoning, but in general it’s a blend of different spices and dried herbs such as smoked paprika, dried thyme, onion powder etc. We know that chickpeas go well with spice (hello delicious chickpea curries!) so here we’ve got quick and easy creamy cajun chickpeas.

This dish also contains about 3 vegetables - 4 if you count chickpeas - so it’s the perfect mid week meal when you’re wanting something quick and nutritious. If you like extra spice then you can add a bit of dried chilli powder too.

What ingredients do you need for this dish (includes possible substitutions)? 

Onion: you can use any variety of onion here (brown, red, shallots - they’ll all do!) 

Pepper: use any colour but just beware that green will give it a slight bitter taste. 

Tomato paste: this gives flavour and colour to the dish so can’t really be substituted. 

Spices and herbs: provides the cajun flavour to this recipe! 

Chickpeas: these can be substituted with most other cooked beans/pulses. 

Cream cheese: try to use the full fat version because some low fat brands may split.

Spinach: can be left out but gives a nice pop of colour and extra nutrients!

What to serve this with? 

Salad, an extra portion of vegetables, rice, little squares of roasted potatoes…This dish would go with a lot of things!

Instructions 

Fry the onion and peppers 

In a medium sized frying pan over a medium-high heat, add the oil then once the pan is nice and hot, add the onion and peppers with a pinch of salt. Let this cook until the onions and peppers have softened, stirring regularly. This will take about 5 minutes. 

Add the garlic, tomato paste and spices 

Reduce the heat to medium then add the garlic, tomato paste and spices and cook for another 2 minutes. Stir it frequently!

Add the chickpeas, water and cream cheese 

Add the chickpeas, water and cream cheese then bring to a simmer over a high heat. Let this cook for 2 more minutes. Then all that’s left to do is stir in the spinach and cook until wilted. Taste for seasoning and that’s it!

Cajun Chickpeas

Ingredients

  • 1 onion, finely sliced
  • 1 pepper, finely sliced
  • 2 garlic cloves, finely chopped
  • 50g tomato paste
  • 1 tsp smoked paprika
  • 1/4 tsp dried oregano
  • 1/4 tsp dried thyme
  • 1/8 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 400g can chickpeas, drained
  • 50g cream cheese
  • 150ml water
  • 75g spinach
  • Oil, salt

Method

  1. In a medium sized frying pan over a medium-high heat, add 1-2 tbsp of oil then the onion and peppers with a pinch of salt. Cook until softened, about 5 minutes.
  2. Reduce the heat to medium then add the garlic, tomato paste and spices. Cook for 2 minutes.
  3. Add the chickpeas, water and cream cheese. Bring to a simmer and cook for 2 minutes.
  4. Stir in the spinach and cook until wilted. And that's everything!
