This dish also contains about 3 vegetables - 4 if you count chickpeas - so it’s the perfect mid week meal when you’re wanting something quick and nutritious. If you like extra spice then you can add a bit of dried chilli powder too.
Onion: you can use any variety of onion here (brown, red, shallots - they’ll all do!)
Pepper: use any colour but just beware that green will give it a slight bitter taste.
Tomato paste: this gives flavour and colour to the dish so can’t really be substituted.
Spices and herbs: provides the cajun flavour to this recipe!
Chickpeas: these can be substituted with most other cooked beans/pulses.
Cream cheese: try to use the full fat version because some low fat brands may split.
Spinach: can be left out but gives a nice pop of colour and extra nutrients!
Salad, an extra portion of vegetables, rice, little squares of roasted potatoes…This dish would go with a lot of things!
In a medium sized frying pan over a medium-high heat, add the oil then once the pan is nice and hot, add the onion and peppers with a pinch of salt. Let this cook until the onions and peppers have softened, stirring regularly. This will take about 5 minutes.
Reduce the heat to medium then add the garlic, tomato paste and spices and cook for another 2 minutes. Stir it frequently!
Add the chickpeas, water and cream cheese then bring to a simmer over a high heat. Let this cook for 2 more minutes. Then all that’s left to do is stir in the spinach and cook until wilted. Taste for seasoning and that’s it!
