What ingredients do you need for this dish (includes possible substitutions)? 

Red onions: I love red onion here for the extra colour in the dish, but you can use brown if easier! 

Courgette: essential to the dish! 

Garlic: add as much as you want! 

Tomato paste: essential to the sauce. 

Butter beans: can be substituted with any of your favourite bean! 

Double cream: can be substituted with about 50-75g of cream cheese if preferred. 

Parmesan: adds seasoning to the sauce. 

Capers: adds acidity to the dish. Can be substituted with lemon juice if preferred! 

Basil: adds flavour and freshness!

What’s the best way to store this dish? 

Place in an airtight container in the refrigerator. Then reheat either in the microwave, in the oven, or on the hob. 

Can this be frozen?

Yes! Just place in an airtight container then defrost in the fridge overnight or in the microwave.

Creamy Courgette Onion Beans

Ingredients

  • 2 red onions, finely sliced
  • 1 courgette, halved lengthways then finely sliced
  • 2 garlic cloves, finely chopped
  • 30g tomato paste
  • 1 400g can butter beans
  • 100ml double cream
  • 2 tbsp grated parmesan
  • 2 tbsp capers
  • 5g basil leaves
  • Oil, salt

Method

  1. In a large frying pan, add 1-2 tbsp oil then add then onion and courgettes. Cook until softened and sweet, about 10 minutes. Stir often.
  2. Add the garlic and tomato puree, cook for 2 minutes. Stir often.
  3. Pour in the beans along with the liquid, then add the double cream, parmesan and capers.
  4. Simmer for 5 minutes then top with basil leaves, and that’s it!
