I love a quick bean dish, and this is one I return to often! It really easy and filling, and as usual it’s packed with lots of fibre and nutrients from the beans. This recipe is really versatile, so please read notes below if you want some suggestions!

Onion: red, brown or shallots all work here. You could even swap the onion for a red pepper if you prefer!
Garlic: add as much as you want...
Tomato paste: this is essential for the recipe!
Spices: if you don’t love chilli powder then this can be left out, or if you like things spicy - add more! The garlic powder can also be left out if you don’t want to add it. And the dried oregano can be swapped with dried thyme or mixed herbs.
Double cream: if you’re looking for a lower fat option then double cream can be substituted with about 75g of cream cheese.
Parmesan: this can be substituted with most hard cheeses!
Butter beans: any precooked bean will work in this recipe.
Lemon juice: gives needed acidity to the dish so I would recommend keeping this in!
This dish is also great with extra vegetables (e.g. some mushrooms fried with the onion, or spinach stirred in at the end).

In a large frying pan over a medium-high heat, add 1-2 tbsp of oil. Once hot, add the onion. Cook until softened, about 5 minutes.
Whilst the onion is frying, prep the other ingredients. That is, chop the garlic, assemble the spices, grate the parmesan etc.
Add the garlic and tomato paste. Cook for 2 minutes, stir regularly. Stir in the smoked, paprika, chilli powder, dried oregano and garlic powder.
Add the double cream, water and parmesan. Stir to combine and simmer for 1-2 minutes, until the parmesan is melted.
Squeeze in lemon juice, taste for seasoning and that’s it!
What’s the best way to store this dish?
Place in an airtight container in the refrigerator. Then reheat either in the microwave, in the oven, or on the hob.
Can this be frozen?
Yes! Just place in an airtight container then defrost overnight in the fridge or in the microwave.
