This is their perfect thing to make if you’re low on time. It only takes 15 minutes and uses 4 ingredients. If you want to add something extra, then it would be delicious with some spinach stirred through, or some chopped basil on top. I like to serve this with crusty baguette and butter!

What ingredients do you need for this dish (includes possible substitutions)? 

Jarred roasted peppers: roasted peppers are one of my favourite things to keep in the cupboard! But you could of course roast your own peppers for this… 

Feta: a good quality feta is best here since it’s the majority of the sauce! 

Garlic: I find one garlic clove is enough in this recipe since it’s more pungent when pureed, but add as much as you want!

Butter beans: any precooked bean/pulse would be good here!

What’s the best way to store this dish? 

Place in an airtight container in the refrigerator. Then reheat either in the microwave, in the oven, or on the hob. 

Can this be frozen?

Yes! Just place in an airtight container then defrost in the fridge overnight or in the microwave.

Feta Pepper Beans

Ingredients

  • 1 465g jar roasted peppers (350g drained weight)
  • 200g feta
  • 1 garlic clove, peeled
  • 2 400g can butter beans (about 480g drained weight)

Method

  1. In a high powered blender (e.g. a nutribullet), blend the roasted peppers, feta and garlic clove. You may need a splash of water!
  2. In a large pan over a low-medium heat, add the butter beans and feta sauce. Stir until heated through. And that’s it!
