Jarred roasted peppers: roasted peppers are one of my favourite things to keep in the cupboard! But you could of course roast your own peppers for this…
Feta: a good quality feta is best here since it’s the majority of the sauce!
Garlic: I find one garlic clove is enough in this recipe since it’s more pungent when pureed, but add as much as you want!
Butter beans: any precooked bean/pulse would be good here!
What’s the best way to store this dish?
Place in an airtight container in the refrigerator. Then reheat either in the microwave, in the oven, or on the hob.
Can this be frozen?
Yes! Just place in an airtight container then defrost in the fridge overnight or in the microwave.
