This is an easy butter bean curry, similar to butter chicken. It’s very quick and can come together in about 20 minutes. It’s easy too and there’s no need to blend the sauce (so less washing up!). The spring onion, coriander and lemon sprinkle at the end gives a very welcome freshness to the dish which really brings it all together.

Butter Bean Curry

This is an easy butter bean curry, similar to butter chicken. It’s very quick and can come together in about 20 minutes. It’s easy too and there’s no need to blend the sauce (so less washing up!). The spring onion, coriander and lemon sprinkle at the end gives a very welcome freshness to the dish which really brings it all together. 

The base of this sauce would work perfectly with most canned pulses or vegetables. Roasted cauliflower in particular would work excellently with this sauce.

What ingredients do you need for this dish (includes possible substitutions)? 

Onion: brown or red onions can be used here. 

Garlic and ginger: you can use fresh or the stuff in the jars! 

Spices: the mix of the spices in the dish gives a similar flavour to a butter chicken sauce. 

Tomato paste: provides flavour and colour to the dish. 

Butter beans: can be substituted with other canned pulses, or vegetables (e.g. some roasted cauliflower). 

Cream: creates the sauce and gives the dish a richness. This can be substituted with coconut milk if you want to veganise it.

Coriander, spring onion and lemon: the coriander and spring onion is chopped together and mixed with lemon juice. This gives a nice freshness to the finished dish.

What to serve this with? 

Rice or naan! Also goes very nicely with some garlic fried broccoli.

Instructions 

Fry the onion 

In a medium sized frying pan over a medium heat, add 1-2 tbsp of butter (or oil) then the onion. Cook until softened slightly, about 5 minutes. Stir frequently.

Add the garlic, ginger, spices and tomato paste 

Add the garlic, ginger, spices and tomato paste. Cook for 2 minutes. Stir often. 

Add the butter beans and double cream 

Pour in the butter beans (along with the liquid), then pour in the double cream. Stir well to combine everything then simmer for 5 minutes. If you don’t want to add the liquid from the can, then just add about 50ml of water. 

Mix together the coriander, spring onion and lemon juice 

Meanwhile, for the topping, mix together the coriander, spring onion and lemon juice in a small bowl. Top the curry with the coriander and spring onion mixture, then enjoy!

Ingredients

  • 1 onion, sliced
  • 2 garlic cloves, grated
  • 1 tsp grated ginger
  • 1/2 tsp ground cumin
  • 1/2 tsp garam masala
  • 1/2 tsp ground coriander
  • 1/2 tsp smoked paprika
  • 1/4 tsp chilli powder
  • 1 tbsp + 2 tsp tomato paste
  • 1 400g can butter beans
  • 100ml double cream
  • 2 tbsp chopped coriander
  • 1 spring onion, finely sliced
  • 1/2 lemon, juiced
  • Butter/oil, salt

Method

  5. Top the curry with the coriander and spring onion mixture, then enjoy!
