Double cream: gives richness to the sauce.
Butter beans: can be substituted with any bean - or it would be great with pasta too!
This is great served with a vinegary side salad!
In a medium saucepan over a low-medium heat, add 1-2 tbsp of oil then the garlic. Cook until golden, about 2 minutes. Stir often.
Add the tomato pesto and double cream. Stir to combine.
Pour in the water then add the butter beans and stir well so everything is incorporated and heated through. Taste for seasoning then add the chopped parsley if using!
What’s the best way to store this dish?
Place in an airtight container in the refrigerator. Then reheat either in the microwave, in the oven, or on the hob.
Can this be frozen?
Yes! Just place in an airtight container then defrost in the fridge overnight or in the microwave.
