These queso style beans mean you can get all the delicious flavours of queso but as an entire meal! Add as much or as little of the chopped jalapeños as you want, depending on how spicy you like it. I like to serve this with tortilla chips, some guacamole and pickled red onions, but you can really add whatever you fancy!

What ingredients do you need for this dish (includes possible substitutions)? 

Onion: I like brown onion the best for this recipe! 

Garlic: add as much as you want! 

Spices: you can play around with the spices here, e.g. a bit of chilli powder would be delicious too if you like spice! 

Evaporated milk: essential to the recipe! 

Smoked cheddar and normal cheddar: I would definitely recommend trying to source smoked cheddar for this recipe as it makes all the difference! You can find it in most large supermarkets. 

Cannelini beans: you could also swap with butter beans if preferred! 

Pickled jalapeños: add as much or as little as you want! 

Coriander: brings a nice freshness to the dish. 

FAQ 

What’s the best way to store this dish? 

Place in an airtight container in the refrigerator. I find this is easiest to reheat on the hob, you may need a splash of water too! 

Can this be frozen?

Yes! Just place in an airtight container then defrost in the fridge overnight.

Queso Beans

Ingredients

  • 1 onion, very finely chopped
  • 1 large garlic clove, finely chopped
  • 1 tsp each smoked paprika, garlic powder, ground cumin
  • 200g evaporated milk
  • 60g smoked cheddar cheese, grated
  • 60g cheddar cheese, grated
  • 2 400g can cannellini beans, drained
  • 50g pickled jalapeños, chopped (add more or less depending on spice level!
  • 15g coriander, finely chopped
  • Topping/sides: tortilla chips, guacamole, spring onion, pickled red onions
  • Oil, salt

Method

  1. In a frying pan over a medium heat, add the oil then onion. Cook until softened, about 5 minutes.
  2. Add the garlic and spices, cook for another 2 minutes. Stir often.
  3. Add the beans, evaporated milk and cheeses. Simmer until melted.
  4. Mash about half of the beans.
  5. Stir in the jalapenos and coriander. And that’s it!
