What ingredients do you need for this dish (includes possible substitutions)? 

Roasted peppers: I use jarred roasted peppers for convenience, but you could of course use your own roasted peppers! 

Boursin cheese: can be substituted with cream cheese.

Garlic: I usually find 2 is about enough here as blending garlic makes it more potent than chopped.

Chickpeas: you can use any canned bean here!

What’s the best way to store this dish? 

Place in an airtight container in the refrigerator. Then reheat either in the microwave, in the oven, or on the hob. 

Can this be frozen?

Yes! Just place in an airtight container then defrost in the fridge overnight or in the microwave.

Creamy Boursin Chickpeas

Ingredients

  • 180g jar roasted peppers (drained weight)
  • 150g Boursin cheese
  • 2 garlic cloves, peeled
  • Pinch of salt
  • 2 x 400g can chickpeas, drained (about 480g drained weight)

Method

  1. In a high powered blender (e.g. a nutribullet), blend the roasted peppers, Boursin cheese, garlic cloves and a pinch of salt. You may need a splash of water!
  2. In a large pan over a low-medium heat, add the chickpeas and sauce. Stir until heated through. And that’s it!
