These artichoke, spinach and lemon beans come together in 20 minutes and only uses a handful of ingredients. You can either chop the artichokes very finely, or do as I do and use a blender! They're great served with some crusty buttery bread.

What ingredients do you need for this dish (includes possible substitutions)? 

Jarred artichokes: this is essential to the recipe! 

Garlic: I find one garlic clove is enough in this recipe, but add as much as you want! 

Parmesan: you can use a vegetarian friendly hard Italian cheese if needed here. 

Cannellini beans: any white bean will work here! 

Cream cheese: adds creaminess to the dish, could be substituted with mascarpone! 

Lemon: adds a bit of freshness to the dish.

Spinach: this could be left out, but I like the added colour and nutrients it gives.

What to serve this with? 

This is perfect served with some crusty buttered baguette!

What’s the best way to store this dish? 

Place in an airtight container in the refrigerator. Then reheat either in the microwave, in the oven, or on the hob. 

Can this be frozen?

Yes! Just place in an airtight container then defrost in the fridge overnight or in the microwave.

Artichoke Spinach Beans

Ingredients

  • 1 280g jar artichokes (in oil), drained (drained weight about 185g)
  • 1 garlic clove, peeled
  • 30g parmesan (or vegetarian hard Italian cheese), grated
  • 2 400g can cannellini beans, drained (drained weight about 480g)
  • 40g cream cheese
  • 1/2 small lemon, juiced
  • Handful of spinach
  • Oil, salt, pepper

Method

  1. In a high powered blender (e.g. a nutribullet), blitz artichokes, garlic and parmesan until finely chopped. Alternatively you can do this by hand, just chop the artichokes and garlic very finely!
  2. In a large frying pan over a medium heat, add 1 tbsp of oil. Once hot, add the cannelloni beans and the artichoke mixture. Stir to combine.
  3. Stir in the cream cheese, a squeeze of lemon, a pinch of salt and plenty of black pepper.
  4. Add the spinach and stir until wilted. And that’s it!
