It’s no surprise that I love spicy food, so buldak noodles are one of my favourite things to eat! However, they’re obviously not the healthiest and contain little fibre, so this is what I eat when I want to satisfy the craving but still eat something nourishing. You can use any bean here!

It’s no surprise that I love spicy food, so buldak noodles are one of my favourite things to eat! However, they’re obviously not the healthiest and contain little fibre, so this is what I eat when I want to satisfy the craving but still eat something nourishing. You can use any bean here! 

What ingredients do you need for this dish (includes possible substitutions)? 

Onion: brown, red or shallots will all work here!

Garlic: add as much as you want! 

Gochujang: can adapt the quantity depending on how spicy you like it… 

Chilli powder: same as above! 

Tomato paste: gives the dish a rich colour and extra dimension of flavour. 

Stock: can use chicken or vegetable stock here.

Grated cheddar: could be swapped with grated mozzarella! 

Cream cheese: makes the sauce a bit creamier, but can be left out if you want...

Soy sauce: seasons the recipe! 

Butter beans: any bean will work here!

What’s the best way to store this dish? 

Place in an airtight container in the refrigerator. Then reheat either in the microwave, in the oven, or on the hob. 

Can this be frozen?

Yes! Just place in an airtight container then defrost in the fridge overnight or in the microwave.

Buldak Beans

Ingredients

  • 1 onion, finely chopped
  • 4 garlic cloves, finely chopped
  • 1 tbsp gochujang
  • 1 tsp chilli powder
  • 60g tomato paste
  • 75ml light chicken stock (about 1/2 stock pot)
  • 30g grated cheddar
  • 30g cream cheese
  • 1/2 tbsp light soy sauce
  • 1 400g can butter beans, with liquid
  • Oil, salt
  • Topping: finely chopped spring onion

Method

  1. In a large non-stick frying pan over a medium heat, add 1-2 tbsp of oil. Once hot, add the onion with a good pinch of salt and cook until softened.
  2. Add the garlic, gochujang, chilli powder and tomato paste. Cook for a couple of minutes.
  3. Add the beans along with their liquid. If you don’t want to add the liquid then just add about 50ml more water!
  4. Add the chicken stock and cheddar. Stir until melted.
  5. Stir in the cream cheese and soy sauce.
  6. Top with spring onion, and that’s it!
