Dal is one of my favourite comfort foods and this chickpea curry leaf dal is ready in 20 minutes. The curry leaf adds a really delicious aromatic flavour to the dish which isn’t really like anything else, however I know sometimes curry leaf is a bit tricky to find… So if you’re unable to source it, this dish is equally delicious without the curry leaf.

I love adding frozen spinach into pesto because it adds extra veg and bulks out the sauce. However because the spinach is frozen, I would recommend using a fairly high powered blender (I use a nutribullet).

If you haven’t tried lamb with noodles, I’d 100% recommend doing so. The lamb gives a really nice deep savoury flavour to the dish.

Stroganoff is typically made with beef, but I’ve swapped it here for mushrooms and chickpeas. This by no means is an authentic stroganoff recipe, however I think you’ll love this vegetarian high fibre version.
