Feta Garlic Eggs

Ingredients

for the eggs

  • 2 large onions, finely sliced
  • 2 large garlic cloves, chopped
  • 1 tsp smoked paprika
  • 1/2 tsp ground cumin
  • 1 400g can chickpeas, drained
  • 2-4 eggs
  • 2 tbsp chopped chives
  • Oil, salt

for the feta cottage cheese

  • 300g cottage cheese
  • 60g feta, crumbled
  • 1 garlic clove, crushed

Method

  1. In a medium sized frying pan over a medium heat, add the oil. Once hot, add the sliced onions and a generous pinch of salt. Stir the onions every few minutes, ensuring you scrape the browned bits from the bottom of the pan! Cook until they taste sweet and softened, about 10-15 minutes.
  2. Heat a pan of water to the boil then add the eggs for about 6 minutes, this will give a slightly runny yolk. Once cooked, place the eggs in a bowl of cold water then peel.
  3. In a bowl mix together the cottage cheese and feta.
  4. Add the chopped garlic and spices to the onion pan. Cook for a further two minutes.
  5. Add the chickpeas to the onions and stir until they’re heated through.
  6. Spoon the cottage cheese on a couple of plates then top with the chickpeas, egg and chives. And that’s it!
