I probably make a variation of this pasta every week! It’s really quick, easy and tastes delicious. If you don’t want to use prawns then chicken or salmon would be equally good. I like to use penne pasta, but tagliatelle is also great too!

What ingredients do you need for this dish (includes possible substitutions)?

Onion: brown, red or shallots all work here!

Pepper: I like to add a pepper for the additional sweetness it gives, and to get some more veg in the diet… but this is optional!

Garlic: essential to the recipe! Add as much as you want!

Tomato paste: this is a fundamental ingredient in the sauce so can’t be left out or substituted.

Spices: the core spices that I normally use are below, however sometimes I’ll add extra chilli powder, or I’ll add double garlic powder and no onion powder. So do as you fancy!

Prawns: could be substituted for chicken breast or a side of pan fried salmon.

Double cream: essential for the sauce!

What to serve this with?

This is great served with a side salad or some garlic bread!

Creamy Prawn Pasta

Ingredients

  • 200g pasta (I used penne), dry weight
  • 1 onion, finely sliced
  • 1 pepper, finely sliced
  • 2 garlic cloves, finely chopped
  • 50g tomato paste
  • 1 tsp smoked paprika
  • 1/4 tsp dried oregano
  • 1/4 tsp dried thyme
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 225g prawns, peeled and deveined
  • 125ml double cream
  • 2 tbsp chopped parsley (optional)
  • Oil, salt

Method

  1. Cook pasta according to packet instructions.
  2. In a large frying pan over a medium-high heat, add 1-2 tbsp of oil then add the onion, pepper and a good pinch of salt. Cook until softened, about 5-8 minutes.
  3. Add the garlic, tomato paste and spices. Cook for 2 minutes. Stir often.
  4. Add the prawns and fry until they’re about 90% cooked.
  5. Pour in the double cream and a splash of pasta water.
  6. Simmer until the prawns are fully cooked, about 2 minutes.
  7. Add the drained pasta and stir everything together really well (you may need a splash more pasta water). Top with chopped parsley. And that’s it!
