I've noted that the feta is optional here, sometimes I add it and sometimes not. The pickled red onions are definitely recommend though as they bring a nice freshness and acidity to the dish.

This is the perfect high protein baked salad, one portion has over 30g of protein. I’ve used giant cous cous here but you can use whatever your favourite grain is.

I love making an apple salad when autumn starts but really this salad is delicious at anytime in the year. I like to use pickled red onion, you can find a recipe for that in the recipe linked below, however fresh red onion would also work too.

This salad is high protein and filling. I’ve charred the corn by frying it for a few minutes, but of course you could also grill whole sweet corn ears then slice off the kernels.

This comes together in under 15 minutes. If you don’t want to get a blender out for the dressing, then finely chop the sun-dried tomatoes and mix it together with the rest of the ingredients.

This is one of those special dishes where the finished product is far superior to the sum of its parts. I’m not even sure if this can be called a recipe, but it definitely is the perfect thing to make in summer, when you’ve got access to great tomatoes and you don’t want to turn the oven on.
