Ingredients
for the the dressing
1 tsp sesame oil
1 tbsp white wine vinegar (or rice wine vinegar)
1 tsp light soy sauce
½ tsp honey
Chilli crunch oil, to taste (optional)
Pinch of salt
for the the salad
1 large carrot
1 small spring onion, finely chopped
125g cooked green or puy lentils
1 tsp sesame seeds
50g feta cheese, crumbled
Method
In a medium bowl, whisk together the sesame oil, vinegar, soy sauce, honey, and a pinch of salt. Stir in chilli crunch oil, if using.
Peel the carrot, discarding the outer peel. Then, use the peeler to shave the carrot lengthways into ribbons.
Add the carrot ribbons to the dressing and toss to coat well. Set aside to marinate while you prepare the other ingredients.
Toss the carrot ribbons again, then add the spring onion, lentils and sesame seeds. Mix gently to combine.
Finally, add the crumbled feta and toss lightly to finish.
