I love making an apple salad when autumn starts but really this salad is delicious at anytime in the year! I like to use pickled red onion, you can find a recipe for that in the recipe linked below, however fresh red onion would also work too!

Ingredients
for the salad
1 small apple, sliced into thin matchsticks
60g stilton, crumbled
2 celery sticks, diced
70g romaine lettuce, finely chopped
2 tbsp sliced red onion (either pickled or fresh)
3 tbsp chopped parsley
40g walnuts, toasted
for the dressing
100g greek yoghurt
1 tsp dijon mustard
1 garlic clove, crushed
1 tsp honey
1 tbsp apple cider vinegar
1/2 tbsp extra virgin olive oil
1/2 tsp dried chives
1/4 tsp dried parsley
1/2 - 1.5 tbsp water
Method
Mix all the ingredients together for the dressing in a large bowl, but depending on how thick your yoghurt is, you may need about 1/2 - 1.5 tbsp of water to loosen the dressing.
In a large bowl add all of the salad ingredients.
Pour over the dressing then mix well. And that’s everything!
