Cheesy Spicy Noodles

Ingredients

  • 1 tbsp sesame oil
  • 130g dry egg noodles (about 2 nests)
  • 2 garlic cloves, crushed
  • 2 tsp chopped scotch bonnet chilli
  • 1 tsp chilli powder
  • 60g tomato puree
  • 150ml water
  • 110g grated mozarella
  • 25g cream cheese
  • 1 tbsp light soy sauce
  • 1 spring onion, chopped

Method

  1. Cook the egg noodles according to the packet instructions.
  2. In a medium sized pan over a low-medium heat, add the sesame oil then the garlic, chilli, chilli powder and tomato puree. Cook for two minutes. Stir often.
  3. Pour in the water, about half the grated mozzarella (reserve the rest for the top), cream cheese and soy sauce.
  4. Stir until the cheese is melted.
  5. Add the noodles and stir to fully coat. Top with the rest of the grated mozzarella then place a lid on top (or a large baking tray) until the cheese is melted.
  6. Top with spring onion, and that’s it!
