Buldak noodles are a Korean brand of instant noodles which are particularly well known for their spice levels (they’re hot!). This is my favourite way to cook the carbonara style ones, with extra pancetta, an egg yolk and some cheddar.

What ingredients do you need for this dish (includes possible substitutions)? 

Carbonara buldak noodles: this is essential to the recipe, you can either buy them online or from an asian supermarket. 

Pancetta: can be substituted with finely chopped bacon. 

Grated cheddar: can be substituted with mozzarella if preferred! 

Black pepper: freshly cracked is my preference, but you could use ground pepper if easier! 

Spring onion: adds freshness to the dish! 

Optional toppings: I like to add a soft boiled egg but this is optional!

What’s the best way to store this dish? 

These are best served straight away, so I wouldn’t recommend keeping them in the fridge/freezer!

Carbonara 2.0 Noodles

Ingredients

  • 50g pancetta
  • 1 egg yolk
  • 2 tbsp grated cheddar
  • Freshly cracked black pepper
  • 1 packet carbonara buldak noodles
  • 1 spring onion, finely chopped
  • Oil
  • Optional toppings: 1 boiled egg

Method

  1. In a small frying pan over a medium heat, add 1 tbsp of oil. Once hot, add the pancetta and cook until crisp.
  2. Meanwhile, cook the noodles according to packet instructions.
  3. In a small bowl, mix the egg yolk with the grated cheddar and plenty of freshly cracked black pepper.
  4. Turn the heat to low then add the noodles, sauce packets and the egg mixture. Stir until melted.
  5. Top with spring onion and boiled egg if using. And that’s it!
