How to store

I’d recommend eating this straight away but if needed you can transfer to an airtight container and keep in the fridge for 3-4 days.

Spicy Edamame Noodles

This easy 10-minute noodle dish is high protein (27g per serving), only has 6 ingredients, and is perfect for busy days!

Spicy Edamame Noodles

Ingredients

  • 80g edamame beans (frozen or fresh)
  • 20g gochujang
  • 30g cheddar cheese, grated
  • 35ml milk
  • 1 nest of dried egg noodles (about 60g)
  • 1 spring onion, finely sliced

Method

  1. If using frozen edamame, place them in a bowl and cover with boiling water. Leave for a few minutes until defrosted, then drain.
  2. Cook the noodles according to the packet instructions. Drain and set aside.
  3. In a medium bowl, mix together the gochujang, grated cheddar, milk, and most of the sliced spring onion (reserve a little for garnish).
  4. Add the hot noodles to the bowl and toss well until coated in the sauce. Stir in the edamame.
  5. Transfer to a serving bowl, sprinkle with the reserved spring onion, and enjoy!
