Spicy Edamame Noodles This easy 10-minute noodle dish is high protein (27g per serving), only has 6 ingredients, and is perfect for busy days!

Print RecipeIngredients 80g edamame beans (frozen or fresh) 20g gochujang 30g cheddar cheese, grated 35ml milk 1 nest of dried egg noodles (about 60g) 1 spring onion, finely sliced Method If using frozen edamame, place them in a bowl and cover with boiling water. Leave for a few minutes until defrosted, then drain. Cook the noodles according to the packet instructions. Drain and set aside. In a medium bowl, mix together the gochujang, grated cheddar, milk, and most of the sliced spring onion (reserve a little for garnish). Add the hot noodles to the bowl and toss well until coated in the sauce. Stir in the edamame. Transfer to a serving bowl, sprinkle with the reserved spring onion, and enjoy!
