One pot noodle dishes are now one of my favourite things to make! They’re really quick, easy and requires minimal washing up. Here we have sweet tomatoes, with a savoury sauce and a rich egg that’s cooked straight into the noodles. It’s a delicious combination and only takes about 10 minutes!

Sesame oil: can be substituted for your preferred oil if necessary!
Tomatoes: I like adding tomatoes because it gives a nice sweetness, but you could substitute for most vegetables really. Some thinly sliced mushrooms would be delicious too!
Spring onion: adds a freshness to the dish which is very welcome!
Garlic: add as much as you want!
Ramen/egg noodles: most quick cooking noodles will work here!
Light and dark soy sauce: dark soy sauce is mostly used for colour (and a bit of seasoning), so if you don’t have it then just add a little extra light soy sauce!
Oyster sauce: this is optional but I like the added richness it gives!
Egg: can be left out if you want!
Grated cheddar: grated mozzarella would also work well here.
What’s the best way to store this dish?
I’d recommend eating this straight away!
