Ingredients
75ml strong coffee
2 small belgian waffles
300g greek yoghurt
30g 70% dark chocolate, chopped
1-2 tsp vanilla extract
100g strawberries, chopped
Honey, to taste
Method
Prepare two small tupperware / pots with lids (about 300ml capacity each), alternatively you could also just use a glass!
Cut the waffles to fit the pot. To do this, place the waffle on a chopping board, turn the pot upside down over it, and press down to cut out the right size.
In a bowl, mix together the greek yogurt, most of the chopped dark chocolate (reserve some for topping), and vanilla extract. Taste and add honey if you’d like it sweeter.
Spoon half the yoghurt mixture into the pots, then add a layer of chopped strawberries.
Pour the coffee into a shallow bowl, dip the waffle in, and turn it to coat evenly. Place it on top of the strawberries in the pot.
Add the remaining yoghurt mixture, then top with more strawberries and chopped chocolate. Drizzle with honey if desired.
