How to Store

Transfer to an airtight container. Then can be kept on the counter or fridge for about 5-7 days.

Healthier Brownies

Ingredients

for the brownies

  • 120g butter, melted
  • 200g honey
  • 2 eggs
  • 2 tsp vanilla extract
  • 300g ground almonds
  • Pinch of salt
  • 60g cocoa powder

for the optional toppings

  • 20g dark chocolate, chopped
  • 15g milk chocolate, chopped
  • 15g white chocolate, chopped
  • 30g raspberries

Method

  1. Preheat the oven to 180°C (160°C fan). Line an 8x8-inch square tin with baking paper.
  2. In a large bowl, whisk together the melted butter, honey, eggs, and vanilla extract until smooth.
  3. Add the ground almonds, salt, and cocoa powder, then stir until fully combined.
  4. Pour the batter into the lined tin, spreading it evenly.
  5. Sprinkle the chopped chocolate on top (if using).
  6. Bake for 16–18 minutes, or until just set.
  7. If using raspberries, scatter them over the brownies once baked.
  8. Allow to cool completely, then slice into 16 squares and enjoy!
