Ingredients
for the brownies
120g butter, melted
200g honey
2 eggs
2 tsp vanilla extract
300g ground almonds
Pinch of salt
60g cocoa powder
for the optional toppings
20g dark chocolate, chopped
15g milk chocolate, chopped
15g white chocolate, chopped
30g raspberries
Method
Preheat the oven to 180°C (160°C fan). Line an 8x8-inch square tin with baking paper.
In a large bowl, whisk together the melted butter, honey, eggs, and vanilla extract until smooth.
Add the ground almonds, salt, and cocoa powder, then stir until fully combined.
Pour the batter into the lined tin, spreading it evenly.
Sprinkle the chopped chocolate on top (if using).
Bake for 16–18 minutes, or until just set.
If using raspberries, scatter them over the brownies once baked.
Allow to cool completely, then slice into 16 squares and enjoy!
