How to store

I recommend eating this frittata fresh. Since the prawns are already cooked and then baked again in the frittata, it’s best not to reheat them a third time. However, leftovers can be enjoyed cold straight from the fridge - and they’re absolutely delicious that way!

4-Ingredient Prawn Frittata

Ingredients

  • 9 eggs
  • 150g cooked prawns
  • 1-2 spring onions, finely sliced
  • 60g grated cheddar
  • Salt, pepper
  • Optional topping: sliced spring onion, chilli crisp oil

Method

  1. Preheat the oven to 180c fan/200c conventional.
  2. Line a 9x9 inch baking tin with baking paper or grease an ovenproof skillet.
  3. In a large bowl, whisk the eggs with salt and pepper then stir in most of the spring onions (reserve some for the garnish).
  4. Place the prawns into the baking dish. Pour over the eggs.
  5. Sprinkle the grated cheddar evenly over the top.
  6. Bake for 15-20 minutes, or until the frittata is just set in the centre.
  7. Top with sliced spring onion and chilli crisp oil, if using.
