Easy Tomato Frittata

Easy Tomato Frittata

Ingredients

  • 9 eggs
  • 50g sun-dried tomato, finely chopped
  • 120g mozzarella, torn into pieces
  • 2-4 tbsp chopped basil
  • Salt and pepper, to taste
  • Oil, for cooking

Method

  1. Crack the eggs into a large bowl, beat until combined. Season with salt and pepper.
  2. Prep the rest of the ingredients: chop the sun-dried tomato, chop the basil.
  3. Heat a large oven-safe skillet or cast-iron pan over medium-high heat. Add enough oil so it covers the bottom of the pan, you could use the sun-dried tomato oil here!
  4. Once the oil is hot, add the eggs.
  5. Sprinkle over the chopped sun-dried tomatoes and basil. Tear in the mozzarella. Cook the eggs for 1-2 minutes, or until the bottom is set.
  6. Transfer the pan to the broiler/grill.
  7. Grill for 3-4 minutes, until the top is puffed, golden, and fully set.
