I often make some form of scrambled tofu when I need a dish that’s ready in less than 15 minutes! FAQ 

What’s the best way to store this dish? 

Place in an airtight container in the refrigerator. Then reheat either in the microwave, in the oven, or on the hob. 

Can this be frozen?

I wouldn’t recommend freezing this!

Harissa Scrambled Tofu

Ingredients

  • 280g extra firm tofu (e.g. tofoo)
  • 3 tbsp harissa
  • 1 garlic cloves, grated
  • 1/2 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1 tbsp tahini
  • 1/2 - 1 tsp honey
  • 1.5 tbsp - 2 tbsp lemon juice
  • 2 slices of toast
  • Topping: chopped spring onion, yoghurt, dill

Method

  1. In a small bowl add the harissa, grated garlic, cumin, smoked paprika, tahini, honey and lemon juice. Stir well until evenly combined.
  2. In a frying pan over a medium heat, add 1-2 tbsp of oil. Once hot, add the crumbled tofu and stir until heated through.
  3. Pour in the sauce and stir to combine.
  4. Spoon on top of buttered toast then top with spring onion, dill and a drizzle of yoghurt. And that’s it!
