Eggs: I usually use two eggs per person, but this recipe can very easily be doubled/tripled!
Cottage cheese: this is key to increase the protein in this dish!
Mayonnaise: this is optional, I just love the additional flavour the mayonnaise gives...
Dijon mustard: my favourite type of mustard! Other varieties of mustard can be swapped in though, just add more/less depending on the head of the mustard.
Chives: chives go really well with eggs, but you can use whatever your favourite soft herb is!
