Step-by-Step Instructions

1. Roast (Optional)

Preheat the oven and roast the almonds and pumpkin seeds until lightly golden for a deeper, nuttier flavour. Alternatively, leave them unroasted for a milder taste.

2. Melt the Chocolate

Melt the dark chocolate using a bain-marie or in short bursts in the microwave, stirring between each burst until smooth.

3. Combine

Mix the almonds and pumpkin seeds into the melted chocolate until evenly coated.

4. Prepare the Tray

Line a tray with baking paper or lightly oil it to prevent sticking.

5. Portion

Use a tablespoon or small scoop to portion the mixture into clusters.

6. Chill

Place in the fridge until fully set and firm.

7. Remove and Serve

Use a spatula to lift the clusters from the tray.

Ingredients

  • 75g almonds
  • 75g pumpkin seeds
  • 100g dark chocolate (about 70%)
  • Optional: pinch of cinnamon

Method

  1. Preheat the oven to 160°C (fan). Roast the almonds and pumpkin seeds for 5–7 minutes if you prefer a deeper, nuttier flavour and extra crunch. Alternatively, you can leave them unroasted for a milder taste and slightly softer texture - this also saves time.
  2. Melt the chocolate using a bain-marie, or in short bursts in the microwave, stirring between each burst.
  3. Mix the nuts and seeds into the melted chocolate.
  4. Line a tray with baking paper or lightly oil it (or you could also use mini cupcake cases!).
  5. Use a tablespoon to portion the mixture (about 1 heaped tbsp per cluster), it should make around 12 clusters.
  6. Chill in the fridge until set (about 1 hour). Alternatively, if your kitchen is cool you can leave it to set at room temperature.
  7. Use a metal spatula to remove the clusters from the tray.
  8. Store in an airtight container.
