Dark chocolate (around 70%)

1. Roast (Optional)
Preheat the oven and roast the almonds and pumpkin seeds until lightly golden for a deeper, nuttier flavour. Alternatively, leave them unroasted for a milder taste.
2. Melt the Chocolate
Melt the dark chocolate using a bain-marie or in short bursts in the microwave, stirring between each burst until smooth.
3. Combine
Mix the almonds and pumpkin seeds into the melted chocolate until evenly coated.
4. Prepare the Tray
Line a tray with baking paper or lightly oil it to prevent sticking.
5. Portion
Use a tablespoon or small scoop to portion the mixture into clusters.
6. Chill
Place in the fridge until fully set and firm.
7. Remove and Serve
Use a spatula to lift the clusters from the tray.

Store in an airtight container in the fridge for up to 1 week (they do last longer but will lose a bit of the crunch the longer they’re kept!. Or if your kitchen isn't too warm, keep in a cool dark place outside of the fridge.

Do I have to roast the nuts?
No - roasting is optional. It adds flavour and crunch, but the recipe works just as well without it.
Can I use a different chocolate?
Yes - milk, white, or vegan chocolate all work, though sweetness will vary.
Why did my chocolate seize?
This can happen if it overheats or comes into contact with water. Melt gently and stir frequently.
Can I make these vegan?
Yes - just use dairy-free dark chocolate.
How big should each cluster be?
About 1 heaped tablespoon per cluster works well for even portions.
