Pasta: I used penne but any variety will be fine!
Feta: creates a delicious creamy sauce!
Slow roasted tomatoes (by Isle of Wight Tomatoes): I use these slow roasted tomatoes!
Garlic: I find one garlic clove is just the right amount in this recipe.
Cook the pasta according to packet instructions.
Using a high-powered blender (e.g. a nutribullet), blend the feta, slow roasted tomatoes, garlic and water (you can use the pasta water here!) until smooth. Stir the sauce into the drained pasta. You may want to add a splash of pasta water to loosen the sauce. And that’s it!
What’s the best way to store this dish?
Place in an airtight container in the refrigerator. Then reheat either in the microwave, in the oven, or on the hob.
Can this be frozen?
I wouldn't recommend freezing this!
