Ingredients
2 tbsp gochujang (about 40g)
1 tbsp BBQ sauce
30g yoghurt
½ tbsp mayonnaise
2 rice paper wrappers
80–100g rotisserie chicken, shredded or sliced
2 small lettuce leaves
½ spring onion, finely sliced
About 1/4 cucumber, cut into matchsticks
Method
In a small bowl, mix together the gochujang, BBQ sauce, mayonnaise, and yoghurt to form a creamy sauce.
Place the cooked chicken in a separate bowl and stir in half the sauce. Reserve the rest for dipping or another use.
Prepare your vegetables: finely slice the spring onion and cut the cucumber into thin matchsticks.
Fill a large shallow bowl with cold water.
Submerge one rice paper sheet in the water for about 20 seconds, or until soft and pliable. Carefully lay it flat on a clean chopping board.
Place a lettuce leaf on the lower third of the rice paper, leaving about 1 inch (2–3 cm) clear around the edges. Top with half the chicken, a few cucumber matchsticks, and sliced spring onion.
Fold the sides of the rice paper over the filling, then roll it up tightly from the bottom to enclose the filling.
Repeat the process with the second rice paper wrapper and remaining ingredients.
