Place in an airtight container in the refrigerator. Then reheat either in the microwave, in the oven, or on the hob.

I wouldn't recommend freezing this!

Cheesy Corn Noodles

Ingredients

for the noodles

  • 100g corn kernels
  • 50g grated mozzarella
  • 1 tbsp cream cheese
  • 1 nest of dry noodles, about 60-80g
  • 2 tsp ramen seasoning
  • 1 tbsp gochujang
  • 2 tbsp butter

for the homemade ramen seasoning

  • 2 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tsp dried parsley
  • 1 tbsp dried chives
  • 1 tbsp sugar
  • 1 tsp chilli powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp ground pepper
  • 3/4 tsp fine salt
  • Topping: chopped spring onion

Method

  1. In a medium sized frying pan over a low-medium heat, add 1 tbsp of butter. Add the mozzarella, corn and cream cheese. Stir until melted.
  2. Cook the noodles according to packet instructions.
  3. In a small bowl mix together all the ingredients for the ramen seasoning, its makes more than you need for this recipe so keep the rest in an airtight container!
  4. In a large bowl, add 1 tbsp of melted butter, gochujang and 2 tsp of ramen seasoning. Stir well.
  5. Add the noodles and stir well.
  6. Place the noodles in a bowl then pour over the cheesy corn and top with spring onion.
