I’d definitely recommend using an extra extra firm tofu for this! I use the brand tofoo and it works really well. This is great on toast but would also be delicious in lettuce cups too.

Curried Cottage Cheese Toast

Ingredients

  • 200g extra extra firm tofu (e.g. tofoo), shredded
  • 120g cottage cheese
  • 2 tbsp mayonnaise
  • 1 tbsp curry powder
  • 2 tbsp chopped coriander
  • 1 spring onion, finely chopped
  • 4 tsp caribbean pepper sauce (or to taste)
  • 2 slices of sourdough toast
  • Salt, pepper

Method

  1. Shred the tofu using a box grater.
  2. In a large bowl, add all the ingredients along with the a good pinch of salt and pepper. Stir well to combine.
  3. Spoon on top of the toast and serve with extra pepper sauce, and that's it!
