I love a quick noodle dish, and I make variation of these noodles all the time - this one is a bit spicy from the chilli but also cheesy and creamy!It's also the perfect thing to make if you're just cooking for one. But it can be easily scaled up too!

What ingredients do you need for this dish (includes possible substitutions)? 

Noodles: you can use any variety of noodles here! My favourite ones are to use the instant ramen noodles. 

Oil: any neutral oil (like sunflower or vegetable) will work well here. 

Garlic: add as much or as little as you want! 

Spring onion: gives a nice freshness to the dish. 

Soy sauce: light and dark soy sauce brings seasoning and colour! 

White wine vinegar: provides a bit of acidity. 

Cream cheese: makes the noodles extra creamy! 

Grated cheese: parmesan or cheddar both work here!

What to serve this with? 

This would be great with any protein, or some boiled eggs, or vegetables! Or the noodles are absolutely delicious as is. 

Instructions 

Add aromatics into a bowl 

Add garlic, spring onion and chilli into a medium sized bowl. 

Stir in the hot oil

In a small saucepan over a high heat, heat the oil until it is sizzling hot (i.e. if you place a chopstick in, the oil will sizzle). Pour the hot oil over the garlic mixture. Stir to combine. 

Add the rest of the ingredients 

Pour in the light soy sauce, dark soy sauce, white wine vinegar, cream cheese, grated cheese, sugar/honey and 2 tbsp water. Stir to combine. Add the cooked noodles and stir everything well to coat in the noodles in the sauce. And that’s it!

FAQ 

What’s the best way to store this dish? 

I’d recommend eating this straight away, but if needed place in an airtight container in the refrigerator. Then reheat either in the microwave, in the oven, or on the hob. 

Can this be frozen?

This isn’t the best dish to freeze!

Ingredients

  • 100g noodles (dry weight)
  • 2 tbsp vegetable/sunflower oil
  • 2 garlic cloves, finely chopped
  • 1 spring onion, finely sliced
  • 1 chilli, finely chopped
  • 1/2 tbsp light soy sauce
  • 1/2 tbsp dark soy sauce
  • 1 tbsp white wine vinegar
  • 2 tbsp cream cheese
  • 2 tbsp grated cheese (cheddar, parmesan etc.)
  • 1 tsp sugar/honey

Method
