This egg mayonnaise has swapped the majority of mayonnaise with cottage cheese for protein, and added avocado for extra fibre and creaminess! It’s the perfect quick breakfast or lunch.

Avocado Egg Mayonnaise

Ingredients

  • 4 eggs
  • 1 avocado, peeled and destined
  • 3 tbsp cottage cheese
  • 1 tbsp mayonnaise
  • 2 tsp dijon mustard (or as much as you want)
  • 1-2 tbsp chopped chives
  • Salt, pepper

Method

  1. Boil the eggs for 9 minutes then place in a bowl of cold water.
  2. Peel the eggs then finely chop.
  3. In a bowl, add the chopped eggs and avocado. Mash well using a potato masher or fork.
  4. Stir in the rest of the ingredients, and that's it!
