Almond croissants are one of my favourite pastries, and they’re really easy to make! They’re also great to keep in the freezer for when you want a quick weekend treat, just add a few extra minutes on the cooking time when you’re ready to bake.

Croissants: or, you could even use pain au chocolat here if you wanted!
Ground almonds: essential to the recipe! However, if you want to play around with different flavours, ground hazelnuts or ground pistachios would be delicious.
Butter: unsalted here!
Caster sugar: you can also use granulated sugar here instead.
Eggs: essential ingredient for the frangipane.
Almond essence: optional but delicious!
Flour: prevents the frangipane from being too wet.
Sliced almonds: adds a nice crunch to the finished croissant.
What’s the best way to store this dish?
Place in an airtight container in the refrigerator.
Can this be frozen?
Yes! I like freezing them before they’re baked and then baking from frozen, just add a few extra minutes onto the baking time.
