This is one of my favourite sandwiches to make. The burrata gives a really nice creamy element to the dish, then we have slightly salty prosciutto and sweet griddled nectarines. For the sriracha mayonnaise and hot honey, you can either buy them or make it yourself (more details below!).

Rosemary focaccia: focaccia is perfect for this sandwich, but if you want, this can be replaced with your favourite bread!
Nectarine: can be substituted with a peach if preferred.
Sriracha mayonnaise: you can either buy this or make it yourself. If you want to make it yourself, simply mix equal quantities of mayonnaise and sriracha (or if you like it spicy, add a larger proportion of sriracha!).
Prosciutto: this can be omitted if you want!
Burrata: can’t really be substituted with anything, although the closest thing would be a very good quality buffalo mozzarella if you can’t find burrata.
Hot honey: you can make this or buy it, if you want a recipe then click here.
Rocket: I love the peppery flavour rocket adds to the dish!
This is perfect as is, but if you want to bulk out the recipe then serving it with some potato wedges, chips or a side salad would be great.
Drizzle the focaccia with olive oil and toast it in a frying pan over a medium heat, until nice and golden.
This step is optional, but I like to griddle the sliced nectarines so they’re slightly soft and charred. Preheat your griddle until it’s smoking hot, then place the nectarine slices on the griddle and char on both sides.
Now it’s time to assemble the sandwich. Spoon the sriracha mayonnaise on the focaccia, then top with prosciutto and the burrata. Add the nectarine, drizzle over the hot honey and add the rocket. And that’s it!
