Ingredients

for the salmon

  • 2 salmon fillets
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt and pepper
  • 1–2 tsp honey or hot honey
  • to serve: cooked rice

for the avocado salsa

  • 100g tomatoes, chopped
  • 1 avocado, diced
  • 30g cucumber, diced
  • 1/2-1 lemon, juiced
  • 1 spring onion, finely chopped
  • 1–2 tsp chopped chilli, to taste (I used bird’s eye)
  • Salt, to taste

Method

  1. Preheat the grill/broiler to high and make sure there’s an oven tray positioned near the top of the oven.
  2. Place the salmon on a lightly oiled baking tray. Season both the skin and flesh sides with salt and pepper. Then coat only the flesh side with the smoked paprika and garlic powder - avoid adding spices to the skin, as they can burn. Place the salmon skin side up.
  3. Once the grill is hot, cook the salmon under the grill for about 8 minutes, or until fully cooked through.
  4. While the salmon is cooking, make the avocado salsa by combining all the ingredients in a bowl. Stir gently to mix.
  5. Once the salmon is out of the oven, drizzle with honey or hot honey. Serve with the avocado salsa and cooked rice.
