This quick and easy salmon recipe has become my new go-to for busy weeknights. The smoky garlic salmon is finished with a drizzle of honey and pairs perfectly with a spicy, creamy avocado salsa. It’s a simple midweek dinner that's full of flavour and ready in 15 minutes!

serves:2
prep time:5
cook time:10
Ingredients
for the salmon
2 salmon fillets
1 tsp garlic powder
1 tsp smoked paprika
Salt and pepper
1–2 tsp honey or hot honey
to serve: cooked rice
for the avocado salsa
100g tomatoes, chopped
1 avocado, diced
30g cucumber, diced
1/2-1 lemon, juiced
1 spring onion, finely chopped
1–2 tsp chopped chilli, to taste (I used bird’s eye)
Salt, to taste
Method
Preheat the grill/broiler to high and make sure there’s an oven tray positioned near the top of the oven.
Place the salmon on a lightly oiled baking tray. Season both the skin and flesh sides with salt and pepper. Then coat only the flesh side with the smoked paprika and garlic powder - avoid adding spices to the skin, as they can burn. Place the salmon skin side up.
Once the grill is hot, cook the salmon under the grill for about 8 minutes, or until fully cooked through.
While the salmon is cooking, make the avocado salsa by combining all the ingredients in a bowl. Stir gently to mix.
Once the salmon is out of the oven, drizzle with honey or hot honey. Serve with the avocado salsa and cooked rice.
