Creamy Spicy Ramen
This is the perfect meal when you want something quick and filling! Add any of your favourite quick cooking vegetables and top with whatever you fancy!

Ingredients
2 garlic cloves, finely chopped
50g tomato paste
1 tbsp miso paste
1 tbsp sriracha sauce
1 tsp chilli powder
300ml light chicken stock (about 1/2 stock cube or pot)
160g dried egg noodles
30g kale, roughly chopped
50g corn kernels
30g cream cheese
1 tsp light soy sauce
Butter/oil
Optional toppings: boiled egg, nori strips, chilli oil, sesame seeds, spring onion, dumplings, etc.
Method
Heat a lightly oiled frying pan over medium heat. Add the garlic and sauté until golden and fragrant.
Stir in the tomato paste, miso, sriracha, and chilli powder.
Pour in the chicken stock and mix well. Bring the mixture to a gentle simmer.
Cook the egg noodles according to the packet instructions.
Add the kale and corn to the simmering broth, cooking for 2–3 minutes until the kale wilts and the corn is tender.
Stir in the cream cheese and soy sauce until fully incorporated.
Add the cooked noodles to the pan, mixing well to coat them in the sauce. Serve hot, garnished with your choice of toppings for added flavour and texture. Enjoy!
