It’s delicious eaten as is with some rice, but it’s also great as a side to some protein, for example some pan fried salmon or pork mince.
Aubergines: the key component of this dish is aubergine, however if you don’t like aubergine then sliced courgette would also work well!
Chilli oil: I like to use crispy chilli oil, the type often used in Chinese dishes.
Honey: clear honey is best here, and don’t worry about using the expensive kind!
Butter: preferably use unsalted butter. If you only have salted, be mindful and season the aubergine a bit less.
This is great served with rice and sprinkled with some sesame seeds and spring onions. If you want some protein, then it would be excellent with some pan fried salmon or pork mince.
Preheat your grill to high, and whilst that’s heating, prep the rest of the ingredients.
Place 1-2 tbsp of oil onto a large shallow baking tray. Add the sliced aubergines then sprinkle with salt.
Place under the grill for about 5 minutes, then flip over and cook for another 5. Keep an eye on them though because grilling times can vary widely depending on the oven.
Meanwhile, place the chilli oil, honey and butter in a small saucepan. Heat gently over a low heat until the butter and honey has just melted. Take off the heat immediately. Spoon the sauce over the aubergines then top with sesame seeds and chopped spring onions if using. Enjoy!
