Brown Sugar Apple Squares

Ingredients

  • 90g melted butter (or vegetable/sunflower oil)
  • 200g dark brown sugar
  • 1 large egg
  • 200g plain flour
  • ½ tsp flaky sea salt (or ¼ tsp fine salt)
  • 2 tsp baking powder
  • 1 medium apple (about 100g), peeled and diced into small cubes

Method

  1. Preheat the oven to 175c fan. Grease and line an 8x8 inch square baking tin with baking paper.
  2. In a large bowl, whisk together the melted butter, brown sugar, and egg until smooth and evenly combined.
  3. Add the flour, salt, and baking powder. Stir until just combined - the mixture will be thick.
  4. Spread the batter evenly into the prepared tin, smoothing the top with a spatula.
  5. Scatter and lightly press the apple cubes into the surface of the batter.
  6. Bake for 25–30 minutes, or until golden brown and the edges are set. A toothpick inserted in the centre should come out clean or with just a few moist crumbs.
  7. Cool in the tin before slicing into bars. Enjoy warm or at room temperature.
