Apricots: as mentioned already, lots of different types of fruit would work in this! The only thing I would recommend would be to not freeze something that’s too small, e.g. grating frozen blueberries would not be very fun…
Yoghurt: I like full fat greek yoghurt with this, but it would also be great with some whipped cream. Or you could just omit this entirely and have the shaved fruit by itself.
Chopped hazelnut: we love textural contrast in recipes! But you can really use any nut (or seed) that you like.
Caramel: it’s nice to add a bit of sweetness to the dish, so choose whatever liquid sweetener you want! Honey or condensed milk are great, or agave/maple syrup would also be delicious.
And this is the type of dish that you can really adapt to whatever you want, so add anything extra you think would go!
Place the apricots in the freezer until they're completely frozen. I put mine in the freezer in the evening and by the morning they were ready!
Using a very sharp grater, grate the apricots straight into the bowl.
Add the yoghurt, chopped hazelnuts and caramel. And that’s it!
