This cheese log is a rich but balanced appetiser that can absolutely be enjoyed as part of a healthy lifestyle.

Boursin cheese/soft goats cheese
Sun-dried tomato
Red onion
Pistachios
Black olives
Capers
Parsley
Honey, for drizzling
Shape the cheese log
Place the cheese onto a sheet of plastic wrap and mold it into a log shape. Wrap tightly and chill (about 30 minutes).
Prepare the coating
In a bowl, mix together the sun-dried tomato, red onion, pistachios, olives, capers and parsley. Set aside.
Coat the cheese log
Spread the mixture onto a chopping board. Unwrap the chilled cheese and gently roll it in the mixture, pressing lightly so it sticks evenly.
Finish and drizzle
Reshape if needed, transfer to a serving plate, and drizzle generously with honey or hot honey.
Chill or serve

About 1-2 hours at room temperature is fine before refrigerating again.
