Ingredients

Boursin cheese/soft goats cheese 

Sun-dried tomato

Red onion

Pistachios

Black olives

Capers

Parsley

Honey, for drizzling

Step-by-step instructions

Shape the cheese log

Place the cheese onto a sheet of plastic wrap and mold it into a log shape. Wrap tightly and chill (about 30 minutes).

Prepare the coating

In a bowl, mix together the sun-dried tomato, red onion, pistachios, olives, capers and parsley. Set aside.

Coat the cheese log

Spread the mixture onto a chopping board. Unwrap the chilled cheese and gently roll it in the mixture, pressing lightly so it sticks evenly.

Finish and drizzle

Reshape if needed, transfer to a serving plate, and drizzle generously with honey or hot honey.

Chill or serve

  • 300g boursin cheese/soft goats cheese
  • 35g sun-dried tomato, finely chopped
  • 20g red onion, chopped
  • 15g pistachios, chopped
  • 20g black olives, chopped
  • 15g capers, chopped
  • 2 tbsp parsley, finely chopped
  • Honey, for drizzling

Method

  1. Shape the cheese log: Place a sheet of plastic wrap (14-16 inches long) on a work surface. Transfer the Boursin cheese to the center of the plastic wrap. Bring the wrap up over the cheese and mold it into a log shape. Refrigerate for 30-40 minutes or freeze for 10 minutes to firm up.
  2. Prepare the outer layer: In a bowl, mix together the sun-dried tomato, red onion, pistachios, olives, capers and parsley. Set aside.
  3. Coat the cheese log: Spread the mixture evenly onto a clean chopping board. Unwrap the chilled cheese log and gently roll it in the mixture, pressing lightly to ensure it sticks. Make sure to coat the ends as well.
