Key Tips for the Best Dumpling Lasagna

  • Use cabbage leaves only and discard thick stems so the layers stay tender.
  • Don’t skip the water added before baking – it steams the wonton wrappers and helps them soften into dumpling layers.
  • Avoid overpacking the filling so the layers cook evenly.
  • Cover the dish while baking to prevent the top from drying out.
  • Let it rest for a few minutes after baking so the layers set slightly before slicing.

This dumpling lasagna works very well for meal prep.

  • Assemble the entire dish up to 24 hours ahead of time.

  • When ready to cook, add the water and soy sauce and bake as directed.

You can also prepare the pork filling a day in advance and store it in the fridge until ready to assemble.

FAQ

Do wonton wrappers cook properly in the oven?

Yes. The added water, and covering with foil, creates steam in the dish, allowing the wrappers to soften and cook like dumpling skins.

Can I freeze dumpling lasagna?

Yes. Freeze the unbaked dish in portions for up to 2 months. Defrost in fridge overnight then cook as instructed.

Can I make this vegetarian?

Yes. Replace the pork with crumbled tofu, mushrooms, or plant-based mince.

Can I add more vegetables?

Definitely. Finely chopped carrots, mushrooms, or water chestnuts work well in the filling.

Why are my dumpling wrappers dry on top?

If the dumpling wrappers on top look a little dry after baking, add 1/4 cup of boiling water, cover the dish tightly with foil, and return it to the oven for 5–10 minutes. The steam will help soften the wrappers so they cook properly.
