Pork mince
Spring onions
Chinese cabbage
Ginger
Garlic

1. Preheat the oven
Preheat the oven to 175c (350F) and lightly oil an 8 x 8 inch baking dish.
2. Prepare the filling
In a large bowl, mix together the pork mince, spring onions, ginger, garlic, sesame oil, sugar, soy sauce, white pepper, and salt.
3. Add the first cabbage layer
Spread a layer of Chinese cabbage leaves across the bottom of the baking dish.
4. Add the first dumpling layer
Place 4–6 wonton wrappers over the cabbage.
5. Add the first pork layer
Spread half of the pork mixture evenly over the wrappers.
6. Add more cabbage
Add another layer of cabbage on top of the pork mixture.
7. Repeat the layers
Add another layer of 4–6 wonton wrappers, then spread the remaining pork mixture over the top.
8. Finish with wrappers
Cover with a final layer of wonton wrappers.
9. Add moisture for baking
Pour 1/2 cup of water and 1 teaspoon soy sauce evenly over the top.
10. Bake
Cover the dish with foil and bake for about 40 minutes, until the pork is cooked through.
11. Garnish and serve
Top with spring onions, chilli crisp, and sesame seeds before serving.

Yes. Replace the pork with crumbled tofu, mushrooms, or plant-based mince.

Why are my dumpling wrappers dry on top?
If the dumpling wrappers on top look a little dry after baking, add 1/4 cup of boiling water, cover the dish tightly with foil, and return it to the oven for 5–10 minutes. The steam will help soften the wrappers so they cook properly.
