Cauliflower: cauliflower is a great vegetable to roast because it goes tender and slightly charred!
Garlic powder, smoked paprika, dried thyme: you can experiment with the spices here, e.g. onion powder could be substituted for garlic, chilli powder for smoked paprika, dried oregano for dried thyme…
Greek yoghurt: I like to use a thick greek yoghurt here, but if you prefer you can use natural yoghurt!
Tahini: gives a richness to the dip.
Lemon: brings freshness!
Garlic: can be omitted if you don’t like the taste of raw garlic!
Parsley and spring onion: you can really put whatever herbs you have in the herb salsa! Coriander would be great, and finely chopped red onion could also work instead of the spring onion…
Apple cider vinegar: I love using apple cider vinegar but really any variety will do.
This is would be delicious served with a bean dish, or if you eat meat/fish, some pan fried salmon or roasted chicken thighs would be delicious.
Preheat the oven to 200c/220c fan. Line a large shallow baking tray with paper then drizzle over 1-2 tbsp of oil. Place the cauliflower onto the baking tray then sprinkle over the spices. Mix well then place in the oven for about 25 minutes, or until tender and golden.
For the tahini yoghurt, mix all the ingredients together in a small bowl.
For the herb salsa, mix all the ingredients together in a small bowl.
Spoon the tahini yoghurt onto a large serving dish, top with the cauliflower then spoon over the herb salsa. Enjoy!
What’s the best way to store this dish?
Place in an airtight container in the refrigerator. Then reheat either in the microwave, in the oven, or on the hob.
Can this be frozen?
I wouldn't recommend freezing this!
